Kimchi can be made with napa cabbage, Korean radish or cucumbers, each with a different texture, salt step and seasoning. A good guide needs more than a flavor list: measured salt, clean food-safe equipment, a suitable container, temperature and storage details all matter. Our three small-batch kimchi adaptations remain unpublished until their salt concentration, fermentation conditions, acidity and storage instructions are validated. Fish sauce and salted shrimp can add fish or shellfish allergens. We will add individual recipes only when those safety checks are complete.
